| Introduction | Staphylococcal enterotoxins (SE) are proteins that cause diarrhoea in people that consume contaminated food or water. Of the nine different known subtypes, SEA, SEB, and SED are the most common causes of staphylococcal food poisoning. These toxins are not found in all strains of Staphylococcus aureus as they are encoded by pathogenicity islands, plasmids, and phage sequences. They have superantigenic effects, cross-linking MHC molecules to T-cell receptors to induce localised inflammation and cytokine production. SEs are heat resistant and do not denature easily during cooking. |
